Community-Driven Consumer Behavior Change Team 1: Moving Towards Culturally Relevant, Environmentally Friendly Whole Foods

For our capstone, we compiled multiple campaigns & research articles to evaluate how strategies can be implemented to increase access to healthy, environmentally friendly, and plant-based foods for different communities in Seattle. We assess three strategies that can drive community-based consumer driven change and can be applied to support the Food Action Plan: 1) Follow the lead of engaged people in the target community and conduct human centered research, 2) Expect that young people in the target community will continue the program, and 3) Combine culturally appropriate nutrition education with improved access to healthy food.
