Dr. Beresford’s research interests are in the areas of nutritional epidemiology, social epidemiology, and chronic disease prevention. Her work is specifically designed to improve the scientific basis for public health policy and recommendations concerning dietary intake, physical activity, and folic acid status. She has been Principal Investigator on numerous individual and group randomized trials of dietary behavior intervention. Her research focus in the science of changing behavior on a population level has involved many interdisciplinary collaborations. The development and evaluation of obesity prevention interventions in work sites, using rigorous group randomized trial design and collaborative principles with participating work sites, provides one such example.

Dr. Beresford is affiliate investigator with the Clinical Nutrition Research Unit and member of the Fred Hutchinson Cancer Research Center in Cancer Prevention and Epidemiology.

Dr. Drewnowski’s interests are in nutritional epidemiology, socioeconomic determinants of obesity and diet-related chronic disease, relation between diet quality and diet cost, and sustainable nutrition security as it relates to climate change. He has developed new value metrics to study nutrient density, affordability, and carbon footprint of individual foods and total diets. Dr. Drewnowski is the Director of the Center for Public Health Nutrition and UW Center for Obesity Research (UWCOR) and was visiting professor at the University of Paris (2012–13).

Dr. Harris has decades of experience as a registered dietitian nutritionist and clinical exercise physiologist, and is certified as a sports dietitian.  Her career path has wound through varied settings including clinical care, fitness and rehabilitation, community health, private practice, higher education, and research. Prior to joining the NSP faculty in 2019, she was an associate professor and the director of the accredited Didactic Program in Dietetics at Bastyr University.

In 2014 Harris was identified as a Fellow of the Academy of Nutrition and Dietetics in recognition of her professional achievements, valuable service to the profession and the public, and pursuit of lifelong learning. She is passionate about whole-person health and wellness, and strives to ignite this passion within her students.

Dr. Kratz’s research focuses on the relationship between diet, obesity, and chronic diseases such as type 2 diabetes, cardiovascular disease, and cancers associated with obesity. Current projects include controlled dietary intervention studies in humans to better understand how diet composition affects energy and glucose homeostasis, or major determinants of glucose homeostasis including insulin sensitivity, pancreatic beta-cell function, liver fat content, and low-grade chronic inflammation. His research group is also conducting translational studies to improve our understanding of the etiology of low-grade chronic adipose tissue inflammation and its relationship to adiposity and insulin resistance.

Dr. Lampe’s research interests relate to the mechanisms by which components of diet, particularly constituents of plant foods, alter susceptibility to and risk of cancer. Her primary research activities include using controlled dietary interventions in humans to determine how individual variation in the gut microbiome and biochemical response to high plant food diets (e.g., biotransformation enzyme modulation, colonic gene expression changes) may explain differences in disease risk. Her laboratory also collaborates with other groups to characterize the gut microbiome in various population-based studies.

Dr. Jason Mendoza’s research seeks to eliminate inequities in childhood physical activity and nutrition outcomes among racial/ethnic minorities and socioeconomically disadvantaged populations through innovative behavioral interventions and policies in school and community settings. Dr. Mendoza’s projects include physical activity promotion (walking/biking to school), screen time (TV) reduction, and examining the relationship of food insecurity to outcomes of chronic disease (HIV and diabetes) in youth and young adults.

Dr. Neuhouser conducts studies to investigate the role of lifestyle factors, including diet, physical activity, and energy balance, in the etiology and prevention of cancer. Her research portfolio includes a variety of observational and intervention studies focused on improving methods for dietary and physical activity assessment, understanding the extent to which diet and physical activity patterns influence intermediate endpoints or biomarkers that may be on the causal pathway to cancer, and investigating whether adoption or maintenance of specific lifestyle habits and diet quality will decrease risk of cancer incidence, cancer recurrence, or cancer-specific mortality. Dr. Neuhouser focuses particularly on breast and prostate cancer and has a special interest in health disparities and nutritional disparities in special populations. Dr. Neuhouser was a Member of the 2015 Dietary Guidelines Advisory Committee.

Dr. Paik studies vitamin A and its role in health and diseases.  Her two main research areas are the role of retinoic acid, one of the metabolites of vitamin A, in reproduction and weight regulation and the role of gut microbiome in inflammatory bowel disease (IBD).  She is currently working on developing small molecules to treat obesity and to be used as male contraceptives.  She also uses germ-free mice to determine whether specific microbiome can induce IBD and colon cancer, aiming to develop a bio-assay to predict colon cancer risk in IBD patients based on their microbiome.

Dr. Rosenfeld studies nutrition and cardiovascular disease, the role of nutrition in regulation of gene expression, lipid and lipoprotein metabolism, and the pathology of atherosclerosis. The current focus of the Rosenfeld Lab is on the accelerated vascular disease associated with obesity, type 2 diabetes, and chronic kidney disease. Specifically, the lab is studying the potential roles of the bone-related proteins osteoprotegerin, receptor activator of NFkB, and receptor activator of NFkB ligand in mediating the accelerated vascular calcification and atherosclerosis that occur in people with chronic kidney disease. The lab is also doing proteomic and genomic discovery studies with macrophages from uremic humans and mice to unveil new therapeutic pathways for chronic kidney disease. Dr. Rosenfeld also studies the roles of air pollution exposure and respiratory infection on atherosclerosis.

Dr. Rosenfeld is the Faculty Graduate Program Coordinator for the Nutritional Sciences Program.

Dr. Sipos works at the intersection of food systems, community engaged scholarship, sustainability, and equity. Her PhD in Integrated Studies in Land & Food Systems at the University of British Columbia investigated long-term partnerships critical for community food systems. She contributed to food system sustainability reports for the City of Vancouver, BC, and Prince George’s County (PGC), MD, while serving respectively on the Vancouver Food Policy Council and the PGC Food Equity Council. Dr. Sipos was Program Director for the Chesapeake Foodshed Network, a regional initiative across 6 states and Washington, D.C., developing learning opportunities and work groups across the food system while advancing an emphasis on community ownership and equity. Her expertise in food systems and sustainability education is complemented by her background in plant biology, soil ecology, and agroforestry.

Laura den Hartigh

Dr. den Hartigh studies mechanisms by which macronutrients such as glucose and fatty acids alter adipocyte inflammation and metabolism. Her lab uses in vitro systems to describe cellular responses to saturated and trans fatty acids, and mouse models of obesity to study the complex interplay between excessive nutrient ingestion, adipose tissue lipid metabolism, and systemic inflammation. The comparison between distinct dietary methods of weight loss is also an area of active investigation.

Amanda M. Fretts

Dr. Fretts’ interests include observational and interventional research aimed at improving the cardio-metabolic health of American Indians.  She has been actively involved with the Strong Heart Study, a longitudinal study of cardiovascular disease and its risk factors in 13 American Indian communities, for the past ten years. Her research efforts have focused primarily on the association of physical activity, diet, a healthy lifestyle, or gene-diet interactions with diabetes-related phenotypes. Currently, she is working on a project to better understand the social determinants of physical activity, diet, and cardio-metabolic health among American Indians and develop a culturally appropriate and targeted pilot intervention to improve the cardio-metabolic health of American Indians.

Dr. Goodchild’s research addresses the nexus of private and public actors and infrastructure in the movement of goods, including food. Recent research has evaluated the impact of changing shopping and delivery patterns, CO2 emissions in strategic routing and schedule planning in urban pick-up and delivery systems, logistics sprawl, and the relationship between freight activity and the economy. Dr. Goodchild is the Director of the Supply Chain Transportation and Logistics Center.

Dr. Lemaitre is interested in new modifiable lipidomic biomarkers that may influence diabetes incidence, cardiovascular disease and healthy aging.  In addition to fatty acid biomarkers of diet, we study lipid biomarkers of metabolism such as sphingolipids and “EETs”, a type of arachidonic acid derivative. We are particularly interested in relating the overall diet quality, and the consumption of specific nutrients and foods, to circulating levels of these new lipids.

Dr. Ickes’s areas of interest include maternal and child nutrition; implementation science; qualitative methods; and social epidemiology.  His current research focuses on social and cultural influences of poor diet and health among mothers and children in low-resource contexts, particularly focusing on East Africa. A second aim of his research is to evaluate large-scale and community-based nutrition and agricultural development programs.

Mr. Atkinson began his career managing a large dietary staff at the University of Washington Medical Center. Since completing his graduate studies, he has been involved in conducting and analyzing clinical research at the Institute for Translational Health Sciences, Northwest Lipid Research Clinic, and Harborview Medical Center. He has worked as a clinical dietitian at a large community health center and at Harborview Medical Center. In his current position at Harborview, he manages six outpatient dietitians, a technology program that reaches all staff and patients, and the staff wellness program. He has served as a preceptor for multiple University of Washington nutrition interns, overseen student placements with his staff, and provided guest lectures on HIV nutrition in our advanced nutrition course. He is the 2017 recipient of the Emerging Leader Award from the Washington State Academy of Nutrition and Dietetics (WSAND).

Ms. Davis is a pediatric dietitian working in the areas of GI, intestinal rehabilitation, and liver transplant. She has published work in the areas of glycemic control, growth hormone treatment, selenium deficiency, and pediatric nutrition assessment. As the Inpatient Clinical Manager, she oversees a staff of 25 Registered Dietitians and coordinates clinical placements of our students with her staff. She has provided multiple guest lectures in our acute care and pediatric nutrition graduate courses.

Ms. Deckert has been a clinical dietitian at UWMC since 1993, focusing primarily on solid organ transplant, specifically liver, kidney, and pancreas. She also has clinical dietetic expertise in the areas of renal, general surgery (including gastric bypass, whipple, and esophageal surgeries), otolaryngology, medical ICU, general medicine, obstetrics, and psychiatry. In 2011, she became the Clinical Nutrition Manager at UWMC, overseeing the clinical Registered Dietitians and Dietetic Technicians, Registered.

HEAL manages several areas of projects that provide opportunities for NSP graduate students to participate in making a difference in improving state and local systems to increase healthy eating, and physical activity.

Ms. Feucht supervises nutrition trainees in the Leadership Education in Neurodevelopmental and Related Disabilities (LEND) program curriculum. Her clinical responsibilities include Child Development and High Risk Infant Follow-up Clinics. She is the Project Director of the Nutrition Services for Children with Special Health Care Needs (CSHCN) contract from the state Title V Agency, providing training for the CSHCN Nutrition Network and Community Feeding Teams. Ms. Feucht is also the editor for the newsletter Nutrition Focus for Children with Special Health Care Needs, published by CHDD.

Ms. Groat has been a clinical dietitian at Harborview Medical Center (HMC) since 2008 and currently works in the neuro-ICU. Over the past decade, she has precepted one to three Nutritional Sciences Program graduate students annually through their clinical rotations. Demonstrating her long-time commitment to training our students, she also guest lectures each year in Acute Care Nutrition (NUTR 563).

Melissa Gunnarson, MS, RD, CD

Ms. Edwards has worked as a clinical dietitian for more than 15 years in areas including pediatrics, inborn errors of metabolism, bariatrics, and geriatrics. She is currently a Metabolic Dietitian at Seattle Children’s Hospital. Ms. Edwards has guest lectured on infant, toddler, and child nutrition, newborn screening, feeding relationships, and food allergies.  She has served as a preceptor for multiple University of Washington nutrition interns. Ms. Edwards currently teaches NUTR 200 Nutrition for Today.

Blishda Lacet, MPH, MBA

Ms. Lacet has more than 20 years of experience in public health. Her experience includes working as a bridge connector among state agencies, universities, nonprofit organizations, hospitals, and community groups. Through her current position in HEAL, Ms. Lacet provides support to community-based organizations to identify and implement strategies to promote healthy food and beverage choices in communities with disproportionate rates of chronic disease. She has served as a preceptor for multiple University of Washington nutrition interns.

Susan McBride MS, RD, CD

Ms. McBride has worked in the field of nutrition for the University of Washington for over a decade in both clinical nutrition and foodservice management positions. Through her roles, she works with students and faculty in various capacities. She guest lectures to our nutrition graduate students on topics including Nutrition and Neurological Injuries, Nutrition for Liver Disease and Pancreatitis, and Applying Management Theories to the Development of Programs and Services (NUTR 563 & 561). Additionally, she has mentored several students per year since 2006 through full-time rotations in clinical, foodservice and management settings.

Megan Nordlund, MS, RD, CD

Ms. Nordlund has been a clinical dietitian on a variety of units at Harborview Medical Center since 2008. She has worked as the burn unit dietitian with both pediatric and adult patients since 2010. She has served as preceptor for numerous University of Washington nutrition interns and guest lectured on nutrition support in burn patients in NUTR 563 Nutrition and Acute Care. In addition to her work as a burn unit dietitian, she has served as Harborview’s Clinical Dietitian Manager since 2012. As the clinical manager, Ms. Nordlund coordinates and oversees our nutrition intern’s clinical training with the Harborview inpatient clinical dietitians.

Mary Podrabsky, MPH, RD

Ms. Podrabsky has served as the Director of School and Community Initiatives at the University of Washington’s Center for Public Health Nutrition since 2007. In this role, she works with school districts, public health organizations, researchers, and community organizations toward the development, implementation, and evaluation of policy and environmental approaches to reduce obesity. Funders include the Robert Wood Johnson Foundation, Centers for Disease Control and Prevention, National Institutes of Health, and the Washington State Department of Health.

Barbara Pullar, MS, RDN, CD

Ms. Pullar has been working at Harborview Medical Center as the Manager of Patient Food Services since 2011. Through this role, she is able to improve patients’ hospital experience by providing quality, nutritious meals and excellent customer service both over the phone and at the bedside. She works closely with staff throughout the hospital, including chefs and cooks, kitchen personnel, registered dietitians, and nurses. She is a preceptor for University of Washington nutrition interns completing food service and management rotations and orients all interns at Harborview to their kitchen and food service program.

Barb Pyper, MS, RD, SNS, FCSI

Ms. Pyper has extensive training in food safety, culinary/recipe development, management, customer service, managing transition, and total quality management. She has served as the director in large-volume food service operations in both colleges and health care and was an adjunct professor of food systems management at Seattle Pacific University for 17 years. Ms. Pyper also serves as the Executive Director for three dietetic practice groups.

Celeste M. Schoenthaler, MPH

Ms. Schoenthaler has served as a preceptor for University of Washington since 2013. She worked with several interns in her previous role with Public Health – Seattle & King County’s Healthy Eating & Active Living (HEAL) unit where her focus was to improve environments, systems, and policies to create sustainable, equitable change. Ms. Schoenthaler will also serve as a preceptor for dietetic students in her current role with King County’s employee health and wellness program, BalancedYou.

Marilyn Shelton, RD, CNSD

Ms. Shelton has been a long-standing clinical inpatient (trauma, surgery ICU) preceptor for students in the Graduate Coordinated Program in Dietetics in the Nutritional Sciences Program. She has mentored student led quality improvement projects and has co-authored case studies with current graduate students. Ms. Shelton has provided numerous guest lectures on clinical nutrition topics (Trauma/Surgery Critical Care) and mentors student groups on case-based learning in NUTR 563.

Judy Simon, MS, RD, CD, CHES

Ms. Simon has spent her entire career in the field of dietetics. Over the years she has been employed at community and teaching hospitals, campus health facilities, and primary care clinics. She has mentored and taught dietetic interns at the University of Illinois and MidMichigan Regional Medical Center. For more than 10 years, Ms. Simon has mentored University of Washington students, lectured to numerous interns during their graduate coursework, and mentored student projects. Since 2011, she has been the instructor for NUTR 560 Nutrition Counseling for Chronic Disease. She is the 2017 recipient of the Community Excellence Award from the Washington State Academy of Nutrition and Dietetics (WSAND), and a recognized Fellow of the Academy.

Peggy Starr, RD, CD

Ms. Starr began her career in dietetics in a private practice in Great Falls, MT, where she was a consultant for WIC, Head Start, Aging Services Senior Nutrition Program, and a skilled nursing facility. She then transitioned to a position in clinical dietetics at the local hospital, where she worked for several years. Ms. Starr relocated to Seattle and worked for almost three years at Northwest Hospital before joining the clinical team at Valley Medical Center. Ms. Starr began her tenure at Valley Medical Center in the transitional care unit and has since become the Registered Dietitian covering the adult medicine oncology units.

Lina Pinero Walkinshaw, MPH

Lina Pinero Walkinshaw’s work is centered on community and population health, primarily on policies, systems, and environmental changes that support access to affordable nutritious foods and beverages for lower-income communities. Pinero Walkinshaw has training and experience in both qualitative and quantitative data collection and analysis methods, community-based participatory research, project management, and database design and management. Her interests include: food security and healthy food access, social determinants of health, sustainable food systems, health equity, water access and health beverage access, program and policy evaluation.

Faculty Bio

Dr. Johnson studies pediatric nutrition, the efficacy of public health nutrition interventions, and public health approaches to obesity. She is the Associate Director of the Center for Public Health Nutrition.
